Directions
- Preheat oven to 180°C (350°F) and grease a cake pan.
- In a bowl, mix flour, baking powder, baking soda, cinnamon, and salt.
- In another bowl, whisk sugar, oil, and eggs until smooth.
- Add grated carrots and mix well.
- Combine wet and dry ingredients gently. Fold in walnuts if using.
- Pour batter into prepared pan and bake for 35–40 minutes.
- Let the cake cool completely.
- Beat cream cheese, powdered sugar, and vanilla until smooth.
- Spread frosting over cooled cake and serve.
